Why marrow?
Because...
...when I think of real Chinese food, I think of eating the delicious marrow tucked into bones.
...it is absolutely delicious. Anthony Bourdain calls it "God's Butter."
...people have been eating it for centuries. Cultures worldwide (Mexican, French, British, Italian, Iraninan, Vietnamese, Hungarian, Alaskan Natives, and more) eat marrow.
...so much of American society has lost touch with food. Appreciation for the animal, where it came from and what it can offer, has decreased. This, to me, is one of the big differences between Chinese food and American food.
...animals should be thanked for the bounty they give to us, and we, in turn, should not waste.
...it's good for you. Marrow is a wonderful and rich source of natural protein.
